Sangiovese vinified in white.
Babuc is a rosé wine obtained exclusively from Sangiovese grapes which are harvested early in late August in order to have the right relationship between sugar maturation and acidity.
The hand-picked grapes are pressed whole and the fermentation is carried without contact with the skins in concrete tanks and (partially) in oak barrels. The periodic batonnage enhances the aromatic characteristics of the wine and give it stability.
In Spring, when the malolactic fermentation is complete, the wine is bottled and refined in the bottle for a further few months.
Babuc is a wine that can be paired both with fish and meat based menus, from appetisers to dessert.
