Production Method

The purity of the Sangiovese is obtained from a careful selection in the vineyard of the best clusters of grapes from the ancient vineyards of Podere Borgaruccio. After soft pressing, the maceration takes place for about twelve to thirteen days.
At the completion of the malolactic fermentation, the wine is aged for about a year in oak barrels of 10 and 5 hl and then for about a year in the bottle.
All vinification is carried out in cement tanks and without the addition of selected yeasts, enzymes or additives for the fermentation and vinification process except for sulfur.
It is a complex and full bodied wine, ideal for pairing with meat and game dishes.
Serving temperature: 18°-20°
